In particular, we have developed preservation techniques (e.g. freezing and modified atmosphere packaging), so that our large-scale daily production can be instantly packaged, frozen and prepared for distribution.

It is a leavened product made with just a few ingredients: flour, water, oil, yeast and salt.
The repeated leavening, which ensures that the product is easier to digest, and the indents, still made by hand, are typical features of focaccia which Tossini wants to retain in order to guarantee a quality product to the consumer, as if it had been bought from the local baker.
